To save money and enjoy better beef, it is essential to align your cooking method with the right cut of meat. The golden rule is the “Good, Fast, Cheap” triangle: you can generally only pick two. Use this guide to choose the right cut for your culinary goals:
1. Fast & Expensive (Tender Cuts)
- Goal: Quick cooking (like high-heat searing).
- Why: These cuts come from muscles that don’t work hard, making them naturally tender.
- Examples: Filet Mignon, Ribeye, and Sirloin.
2. Good & Cheap (Tough, Flavorful Cuts)
- Goal: Slow cooking (smoking, braising, or stewing).
- Why: These cuts come from hard-working muscles, meaning they are rich in collagen. When cooked low and slow, that collagen breaks down into gelatin, resulting in incredible tenderness and juiciness.
